Common Recipe for Tahini
Ingredients:
- 1 cup (140g) hulled sesame seeds
- 1/4 cup (60ml) extra virgin olive oil
- 1/4 cup (60ml) fresh lemon juice
- 2-3 cloves garlic (10-15g), minced
- 1/2 teaspoon (3g) salt, plus more to taste
- 1/4 cup (60ml) water, as needed
- 1/4 teaspoon (1g) ground cumin
- 1 tablespoon (15ml) toasted sesame oil (optional)
- 2 tablespoons (8g) fresh parsley, chopped (optional)
Instructions:
- Toast the sesame seeds in a dry skillet over medium heat for 3-5 minutes, stirring frequently, until they are lightly golden and fragrant. Be careful not to burn them.
- Transfer the toasted seeds to a food processor and grind until they form a crumbly paste, scraping down the sides as needed.
- With the processor running, slowly drizzle in the olive oil and process until the mixture becomes smooth and creamy.
- Add lemon juice, garlic, salt, and cumin to the sesame paste. Process until well combined.
- Gradually add water, one tablespoon at a time, processing after each addition, until the tahini reaches your desired consistency.
- Taste and adjust seasonings, adding more salt or lemon juice if necessary. For a nuttier flavor, you can also add toasted sesame oil at this stage.
- Transfer the tahini to a serving dish. Garnish with chopped parsley, if using.
- Serve as a dip with warm pita bread or fresh vegetables, or use as a spread or ingredient in other dishes.
Notes:
Tahini can be stored in an airtight container in the refrigerator for up to 1 month. Stir well before use, as separation may occur. For a creamier tahini, use hulled sesame seeds, and ensure they are finely ground before adding liquids. This versatile condiment is perfect for making hummus, drizzling over salads, or enhancing the flavor of sandwiches and wraps.
