Common Recipe for Lassi

Ingredients:

  • 2 cups (480ml) plain yogurt
  • 1/2 cup (120ml) cold water
  • 3 tablespoons (45g) sugar, adjust to taste
  • 1/4 teaspoon (1g) ground cardamom
  • Pinch of salt
  • 2 tablespoons (30ml) rose water (optional)
  • 4-5 ice cubes
  • 2 tablespoons (20g) chopped pistachios or almonds for garnish
  • Fresh mint leaves for garnish (optional)

Instructions:

  1. In a large mixing bowl, combine the yogurt, cold water, sugar, ground cardamom, and a pinch of salt.
  2. Using a whisk or hand blender, blend the mixture until it is smooth and frothy. Adjust the sugar to your taste preferences.
  3. If using, add the rose water and blend again briefly to combine.
  4. Place the ice cubes in a blender. Pour the blended yogurt mixture over the ice cubes.
  5. Blend on high speed until the ice is crushed and the lassi is frothy.
  6. Taste and adjust the sweetness or cardamom as needed.
  7. Pour the lassi into glasses, leaving some space at the top for garnish.
  8. Sprinkle the top of each glass with chopped pistachios or almonds.
  9. Garnish with fresh mint leaves if desired.
  10. Serve immediately while cold and refreshing.

Notes:

For a savory version, omit the sugar and add a pinch of salt, cumin powder, and fresh cilantro. Lassi can be stored in the refrigerator for up to 24 hours, but it is best enjoyed fresh. For a fruity twist, blend in mango or strawberry pulp before serving.
