Common Recipe for Lassi
Ingredients:
- 2 cups (480ml) plain yogurt
- 1/2 cup (120ml) cold water
- 3 tablespoons (45g) sugar, adjust to taste
- 1/4 teaspoon (1g) ground cardamom
- Pinch of salt
- 2 tablespoons (30ml) rose water (optional)
- 4-5 ice cubes
- 2 tablespoons (20g) chopped pistachios or almonds for garnish
- Fresh mint leaves for garnish (optional)
Instructions:
- In a large mixing bowl, combine the yogurt, cold water, sugar, ground cardamom, and a pinch of salt.
- Using a whisk or hand blender, blend the mixture until it is smooth and frothy. Adjust the sugar to your taste preferences.
- If using, add the rose water and blend again briefly to combine.
- Place the ice cubes in a blender. Pour the blended yogurt mixture over the ice cubes.
- Blend on high speed until the ice is crushed and the lassi is frothy.
- Taste and adjust the sweetness or cardamom as needed.
- Pour the lassi into glasses, leaving some space at the top for garnish.
- Sprinkle the top of each glass with chopped pistachios or almonds.
- Garnish with fresh mint leaves if desired.
- Serve immediately while cold and refreshing.
Notes:
For a savory version, omit the sugar and add a pinch of salt, cumin powder, and fresh cilantro. Lassi can be stored in the refrigerator for up to 24 hours, but it is best enjoyed fresh. For a fruity twist, blend in mango or strawberry pulp before serving.
