Sweet potato pie

A Southern dessert made with mashed sweet potatoes, sugar, spices, and often evaporated milk, baked in a pie crust.

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Place the sweet potatoes in a large pot and cover with water. Bring to a boil over medium-high heat, then reduce to a simmer and cook until tender, about 20 minutes.
  3. Drain the sweet potatoes and transfer them to a large mixing bowl. Mash until smooth and let cool slightly.
  4. Add granulated sugar, brown sugar, evaporated milk, melted butter, eggs, vanilla extract, cinnamon, nutmeg, and salt to the mashed sweet potatoes. Mix until fully combined and smooth.
  5. Pour the sweet potato mixture into the unbaked pie crust, smoothing the top with a spatula.
  6. Bake in the preheated oven for 50-60 minutes, or until the filling is set and a toothpick inserted in the center comes out clean.
  7. Remove from the oven and let the pie cool on a wire rack to room temperature.
  8. Refrigerate for at least 2 hours before serving to allow the flavors to meld.
  9. Serve chilled or at room temperature. Optionally, top with whipped cream or a scoop of vanilla ice cream.
