Sweet potato pie
A Southern dessert made with mashed sweet potatoes, sugar, spices, and often evaporated milk, baked in a pie crust.
Instructions
- Preheat oven to 350°F (175°C).
- Place the sweet potatoes in a large pot and cover with water. Bring to a boil over medium-high heat, then reduce to a simmer and cook until tender, about 20 minutes.
- Drain the sweet potatoes and transfer them to a large mixing bowl. Mash until smooth and let cool slightly.
- Add granulated sugar, brown sugar, evaporated milk, melted butter, eggs, vanilla extract, cinnamon, nutmeg, and salt to the mashed sweet potatoes. Mix until fully combined and smooth.
- Pour the sweet potato mixture into the unbaked pie crust, smoothing the top with a spatula.
- Bake in the preheated oven for 50-60 minutes, or until the filling is set and a toothpick inserted in the center comes out clean.
- Remove from the oven and let the pie cool on a wire rack to room temperature.
- Refrigerate for at least 2 hours before serving to allow the flavors to meld.
- Serve chilled or at room temperature. Optionally, top with whipped cream or a scoop of vanilla ice cream.
