Kottu Roti
Chopped roti stir-fried with vegetables, meat, and spices.
Instructions
- Heat 1 tablespoon of vegetable oil in a large wok or pan over medium-high heat.
- Add the sliced chicken breast and stir-fry until cooked through and golden brown. Remove from the pan and set aside.
- In the same pan, add the remaining oil. Sauté the onion, garlic, and ginger until the onion is translucent.
- Add the carrot, bell pepper, cabbage, and green chilies. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
- Stir in the curry powder, turmeric, salt, and pepper. Mix well to coat the vegetables with the spices.
- Return the cooked chicken to the pan along with the roti strips. Pour in the soy sauce and stir everything together to combine.
- Push the mixture to one side of the pan, pour the beaten eggs into the empty side, and scramble them until just set.
- Mix the scrambled eggs into the kottu roti until well combined.
- Garnish with chopped cilantro and serve hot.
