Kottu Roti

Chopped roti stir-fried with vegetables, meat, and spices.

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large wok or pan over medium-high heat.
  2. Add the sliced chicken breast and stir-fry until cooked through and golden brown. Remove from the pan and set aside.
  3. In the same pan, add the remaining oil. Sauté the onion, garlic, and ginger until the onion is translucent.
  4. Add the carrot, bell pepper, cabbage, and green chilies. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
  5. Stir in the curry powder, turmeric, salt, and pepper. Mix well to coat the vegetables with the spices.
  6. Return the cooked chicken to the pan along with the roti strips. Pour in the soy sauce and stir everything together to combine.
  7. Push the mixture to one side of the pan, pour the beaten eggs into the empty side, and scramble them until just set.
  8. Mix the scrambled eggs into the kottu roti until well combined.
  9. Garnish with chopped cilantro and serve hot.
