Instructions
- In a large bowl, combine flour and salt. Make a well in the center and add water, egg, and olive oil. Mix until a dough forms.
- Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic. Cover and let rest for 30 minutes.
- In a separate bowl, combine ground lamb, onion, cumin, paprika, salt, and black pepper. Mix well to combine.
- Divide the rested dough into four pieces. Roll each piece into a thin sheet, about 1/16 inch (1.5 mm) thick.
- Cut the sheets into small squares, about 2 inches (5 cm) across. Place a small amount of the lamb mixture in the center of each square.
- Pinch the opposite corners of each square together to form a dumpling, ensuring they are sealed tightly.
- Bring a large pot of salted water to a boil. Add dumplings in batches and cook for 6-8 minutes until they float to the surface.
- In a small saucepan, melt butter over medium heat. Stir in tomato paste and red pepper flakes, cooking for 1-2 minutes.
- In a bowl, mix yogurt and garlic until smooth. Spoon yogurt over the cooked dumplings, then drizzle with the melted butter mixture.
- Garnish with fresh mint or parsley before serving.
