Sweet potato pie

A Southern dessert made with mashed sweet potatoes, sugar, spices, and often evaporated milk, baked in a pie crust.

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Boil the sweet potatoes in a large pot of water until tender, about 40-50 minutes. Drain and let them cool slightly.
  3. Peel the sweet potatoes and place them in a large mixing bowl. Mash until smooth.
  4. Add granulated sugar, brown sugar, evaporated milk, melted butter, eggs, vanilla extract, cinnamon, nutmeg, and salt to the sweet potatoes. Mix until well combined and smooth.
  5. Pour the sweet potato mixture into the unbaked pie crust, spreading it evenly.
  6. Bake the pie in the preheated oven for 55-60 minutes, or until a knife inserted into the center comes out clean.
  7. Remove from oven and let cool on a wire rack. The pie will firm up as it cools.
  8. Serve warm or at room temperature, possibly with a dollop of whipped cream.
