Sweet potato pie
A Southern dessert made with mashed sweet potatoes, sugar, spices, and often evaporated milk, baked in a pie crust.
Instructions
- Preheat the oven to 350°F (175°C).
- Boil the sweet potatoes in a large pot of water until tender, about 40-50 minutes. Drain and let them cool slightly.
- Peel the sweet potatoes and place them in a large mixing bowl. Mash until smooth.
- Add granulated sugar, brown sugar, evaporated milk, melted butter, eggs, vanilla extract, cinnamon, nutmeg, and salt to the sweet potatoes. Mix until well combined and smooth.
- Pour the sweet potato mixture into the unbaked pie crust, spreading it evenly.
- Bake the pie in the preheated oven for 55-60 minutes, or until a knife inserted into the center comes out clean.
- Remove from oven and let cool on a wire rack. The pie will firm up as it cools.
- Serve warm or at room temperature, possibly with a dollop of whipped cream.
