Quinoa salad
A light and nutritious salad made with quinoa, fresh vegetables, herbs, and a tangy dressing.
Instructions
- In a medium saucepan, bring water to a boil and add the quinoa and salt.
- Reduce the heat to low, cover, and simmer for 15 minutes or until the quinoa is tender and water is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and let cool.
- In a large mixing bowl, combine the cooled quinoa, cherry tomatoes, cucumber, red onion, cilantro, and mint.
- In a small bowl, whisk together the olive oil, lime juice, red wine vinegar, and black pepper.
- Pour the dressing over the quinoa salad and toss gently to combine all ingredients.
- Add the diced avocado just before serving and gently mix to incorporate.
- Taste and adjust seasoning if necessary, adding more salt or lime juice to taste.
