Quinoa salad

A light and nutritious salad made with quinoa, fresh vegetables, herbs, and a tangy dressing.

Instructions

  1. In a medium saucepan, bring water to a boil and add the quinoa and salt.
  2. Reduce the heat to low, cover, and simmer for 15 minutes or until the quinoa is tender and water is absorbed.
  3. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and let cool.
  4. In a large mixing bowl, combine the cooled quinoa, cherry tomatoes, cucumber, red onion, cilantro, and mint.
  5. In a small bowl, whisk together the olive oil, lime juice, red wine vinegar, and black pepper.
  6. Pour the dressing over the quinoa salad and toss gently to combine all ingredients.
  7. Add the diced avocado just before serving and gently mix to incorporate.
  8. Taste and adjust seasoning if necessary, adding more salt or lime juice to taste.
