Instructions
- In a large bowl, whisk together the olive oil, lemon juice, Dijon mustard, Worcestershire sauce, garlic, and anchovy paste until well combined.
- Add the chopped kale to the bowl with the dressing. Toss the kale until it is well coated with the dressing.
- Using your hands, massage the dressing into the kale leaves for about 2-3 minutes to help tenderize the kale.
- Add the grated Parmesan cheese to the bowl and toss to combine.
- Season the salad with salt and freshly ground black pepper to taste.
- Add the croutons to the salad and toss gently to combine.
- Transfer the salad to a serving platter or individual plates.
- Garnish with additional grated Parmesan cheese before serving.
- Serve immediately for the best texture and flavor.
