Granola

A crunchy and wholesome mixture of oats, nuts, seeds, and sweeteners, often baked until golden and served as a breakfast or snack.

Instructions

  1. Preheat your oven to 325°F (165°C) and line a large baking sheet with parchment paper.
  2. In a large mixing bowl, combine rolled oats, almonds, pecans, sunflower seeds, and pumpkin seeds.
  3. In a separate bowl, whisk together honey or maple syrup, melted coconut oil, vanilla extract, salt, and cinnamon until well combined.
  4. Pour the wet mixture over the dry ingredients and stir until all the oats and nuts are evenly coated.
  5. Spread the mixture in an even layer on the prepared baking sheet.
  6. Bake in the preheated oven for 20-25 minutes, stirring halfway through, until the granola is golden brown and fragrant.
  7. Remove from oven and let cool completely on the baking sheet. The granola will continue to crisp up as it cools.
  8. Once cooled, stir in the dried cranberries or raisins.
  9. Transfer the granola to an airtight container for storage.
