Granola
A crunchy and wholesome mixture of oats, nuts, seeds, and sweeteners, often baked until golden and served as a breakfast or snack.
Instructions
- Preheat your oven to 325°F (165°C) and line a large baking sheet with parchment paper.
- In a large mixing bowl, combine rolled oats, almonds, pecans, sunflower seeds, and pumpkin seeds.
- In a separate bowl, whisk together honey or maple syrup, melted coconut oil, vanilla extract, salt, and cinnamon until well combined.
- Pour the wet mixture over the dry ingredients and stir until all the oats and nuts are evenly coated.
- Spread the mixture in an even layer on the prepared baking sheet.
- Bake in the preheated oven for 20-25 minutes, stirring halfway through, until the granola is golden brown and fragrant.
- Remove from oven and let cool completely on the baking sheet. The granola will continue to crisp up as it cools.
- Once cooled, stir in the dried cranberries or raisins.
- Transfer the granola to an airtight container for storage.
