Chia seed energy bars
A nutritious snack made with chia seeds, nuts, dried fruits, and natural sweeteners, offering a boost of energy and fiber.
Instructions
- Line an 8x8-inch (20x20cm) baking dish with parchment paper, leaving an overhang on the sides for easy removal.
- In a food processor, pulse the dates until they form a sticky ball. If your dates are dry, soak them in warm water for 10 minutes and drain before using.
- Add almonds and cashews to the food processor and pulse until finely chopped and well combined with the dates.
- In a large mixing bowl, combine the date and nut mixture with chia seeds, honey or maple syrup, peanut butter, dried cranberries, vanilla extract, and salt. Mix well until all ingredients are thoroughly combined.
- Transfer the mixture to the prepared baking dish, pressing it down firmly with a spatula or your hands to create an even layer.
- Sprinkle shredded coconut on top, if using, and gently press it into the mixture.
- Refrigerate for at least 2 hours or until set and firm.
- Once set, lift the mixture out of the baking dish using the parchment paper overhang and place it on a cutting board.
- Cut into bars of desired size. Store in an airtight container in the refrigerator for up to 2 weeks.
