Sweet potato casserole
A comforting casserole made with mashed sweet potatoes, brown sugar, butter, and often topped with marshmallows or a pecan streusel.
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9x13-inch (23x33 cm) baking dish.
- Place the cubed sweet potatoes in a large pot, cover with water, and bring to a boil over high heat. Reduce the heat and simmer for about 20 minutes, or until the sweet potatoes are tender.
- Drain the sweet potatoes and transfer them to a large mixing bowl. Mash until smooth using a potato masher or electric mixer.
- Add the milk, granulated sugar, melted butter, eggs, vanilla extract, ground cinnamon, ground nutmeg, and salt to the mashed sweet potatoes. Mix until well combined and smooth.
- Pour the sweet potato mixture into the prepared baking dish and spread it evenly.
- Sprinkle the chopped pecans evenly over the sweet potato mixture.
- Bake in the preheated oven for 25 minutes.
- Remove the dish from the oven and top with mini marshmallows.
- Return the dish to the oven and bake for an additional 5-10 minutes, or until the marshmallows are golden brown.
- Allow the casserole to cool for a few minutes before serving.
