Sweet potato casserole

A comforting casserole made with mashed sweet potatoes, brown sugar, butter, and often topped with marshmallows or a pecan streusel.

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch (23x33 cm) baking dish.
  2. Place the cubed sweet potatoes in a large pot, cover with water, and bring to a boil over high heat. Reduce the heat and simmer for about 20 minutes, or until the sweet potatoes are tender.
  3. Drain the sweet potatoes and transfer them to a large mixing bowl. Mash until smooth using a potato masher or electric mixer.
  4. Add the milk, granulated sugar, melted butter, eggs, vanilla extract, ground cinnamon, ground nutmeg, and salt to the mashed sweet potatoes. Mix until well combined and smooth.
  5. Pour the sweet potato mixture into the prepared baking dish and spread it evenly.
  6. Sprinkle the chopped pecans evenly over the sweet potato mixture.
  7. Bake in the preheated oven for 25 minutes.
  8. Remove the dish from the oven and top with mini marshmallows.
  9. Return the dish to the oven and bake for an additional 5-10 minutes, or until the marshmallows are golden brown.
  10. Allow the casserole to cool for a few minutes before serving.
