Colcannon
A traditional Irish dish made with mashed potatoes, cabbage or kale, butter, and cream.
Instructions
- Place the potatoes in a large pot and cover with cold, salted water. Bring to a boil over medium-high heat, then reduce to a simmer. Cook until the potatoes are tender, about 15-20 minutes.
- While the potatoes are cooking, melt 2 tablespoons of butter in a large skillet over medium heat. Add the cabbage or kale and cook, stirring occasionally, until wilted and tender, about 5-7 minutes.
- Add the scallions to the pan with the cabbage or kale and cook for an additional 2 minutes. Remove from heat and set aside.
- Drain the potatoes and return them to the pot. Add the remaining 2 tablespoons of butter and the heavy cream. Mash the potatoes until smooth and creamy.
- Fold the cabbage or kale and scallion mixture into the mashed potatoes. Season with salt, pepper, and nutmeg if using. Stir well to combine all ingredients.
- Transfer the colcannon to a serving bowl. Optionally, garnish with chopped fresh parsley.
- Serve warm as a side dish or main course alongside corned beef or other traditional Irish fare.
