Lassi
A traditional Indian yogurt-based drink made with blended yogurt, water, spices, and sometimes fruit, served sweet or savory.
Instructions
- In a large mixing bowl, combine the yogurt, cold water, sugar, ground cardamom, and a pinch of salt.
- Using a whisk or hand blender, blend the mixture until it is smooth and frothy. Adjust the sugar to your taste preferences.
- If using, add the rose water and blend again briefly to combine.
- Place the ice cubes in a blender. Pour the blended yogurt mixture over the ice cubes.
- Blend on high speed until the ice is crushed and the lassi is frothy.
- Taste and adjust the sweetness or cardamom as needed.
- Pour the lassi into glasses, leaving some space at the top for garnish.
- Sprinkle the top of each glass with chopped pistachios or almonds.
- Garnish with fresh mint leaves if desired.
- Serve immediately while cold and refreshing.
