Zucchini Fritters
A crispy and savory dish made with grated zucchini, eggs, flour, and herbs, pan-fried to golden perfection.
Instructions
- Place the grated zucchini in a large bowl and sprinkle with salt. Let it sit for 10 minutes to draw out excess moisture.
- Transfer the zucchini to a clean kitchen towel and squeeze tightly to remove as much liquid as possible.
- In a large mixing bowl, combine the squeezed zucchini, flour, feta cheese, eggs, dill, parsley, black pepper, and onion. Mix until thoroughly combined.
- Heat olive oil in a large skillet over medium heat.
- Scoop about 2 tablespoons of the zucchini mixture for each fritter and carefully place it into the hot oil, flattening them slightly with the back of a spoon.
- Fry the fritters in batches, cooking each side for about 3-4 minutes, or until golden brown and crispy. Adjust the heat as necessary to prevent burning.
- Remove the fritters from the skillet and place them on a plate lined with paper towels to drain excess oil.
- Repeat with the remaining zucchini mixture, adding more oil to the skillet as needed.
- Serve warm, optionally with a side of yogurt or tzatziki sauce.
