Tzatziki

Instructions
- Peel the cucumber and grate it using a box grater. Place the grated cucumber in a clean kitchen towel and squeeze out as much excess water as possible.
- In a mixing bowl, combine the Greek yogurt, grated cucumber, minced garlic, olive oil, and lemon juice.
- Add the chopped dill, mint, salt, and black pepper to the yogurt mixture.
- Stir all the ingredients together until well combined and the mixture is smooth.
- Taste and adjust seasoning if necessary, adding more salt or lemon juice to suit your preference.
- Transfer the tzatziki to a serving bowl and drizzle with a little extra olive oil on top for garnish.
- Refrigerate for at least 1 hour before serving to allow the flavors to meld together.
- Serve chilled as a dip with pita bread or as a sauce for grilled meats and vegetables.
