Tofu scramble

A vegan dish made with crumbled tofu seasoned with spices and vegetables, resembling scrambled eggs.

Instructions

  1. Start by crumbling the tofu into small pieces using your hands or a fork, mimicking the texture of scrambled eggs.
  2. Heat the olive oil in a large non-stick skillet over medium heat.
  3. Add the chopped onion and bell pepper to the skillet. Sauté for about 5 minutes until the onion becomes translucent and the pepper softens.
  4. Stir in the crumbled tofu, turmeric, cumin, smoked paprika, and nutritional yeast. Mix well to ensure the tofu is evenly coated with the spices.
  5. Cook the tofu mixture for about 5-7 minutes, stirring occasionally, until the tofu is heated through and slightly golden.
  6. Add the cherry tomatoes to the skillet, stirring gently to combine. Cook for another 2-3 minutes until the tomatoes are just softened.
  7. Season the scramble with salt and pepper to taste. Adjust the seasoning according to your preference.
  8. Remove the skillet from the heat and stir in the chopped chives or green onions.
  9. Serve the tofu scramble hot, garnished with additional chives if desired.
