Tofu scramble
A vegan dish made with crumbled tofu seasoned with spices and vegetables, resembling scrambled eggs.
Instructions
- Start by crumbling the tofu into small pieces using your hands or a fork, mimicking the texture of scrambled eggs.
- Heat the olive oil in a large non-stick skillet over medium heat.
- Add the chopped onion and bell pepper to the skillet. Sauté for about 5 minutes until the onion becomes translucent and the pepper softens.
- Stir in the crumbled tofu, turmeric, cumin, smoked paprika, and nutritional yeast. Mix well to ensure the tofu is evenly coated with the spices.
- Cook the tofu mixture for about 5-7 minutes, stirring occasionally, until the tofu is heated through and slightly golden.
- Add the cherry tomatoes to the skillet, stirring gently to combine. Cook for another 2-3 minutes until the tomatoes are just softened.
- Season the scramble with salt and pepper to taste. Adjust the seasoning according to your preference.
- Remove the skillet from the heat and stir in the chopped chives or green onions.
- Serve the tofu scramble hot, garnished with additional chives if desired.
