Tabbouleh

A fresh salad made with parsley, bulgur, tomatoes, and lemon juice.

Instructions

  1. Place the bulgur wheat in a large bowl and pour the boiling water over it. Stir briefly, then cover and let it sit for 15-20 minutes, or until the bulgur has absorbed the water and is tender.
  2. Fluff the bulgur with a fork to separate the grains. If any excess water remains, drain it off using a fine mesh strainer.
  3. In a large mixing bowl, combine the chopped parsley, mint, tomatoes, and green onions.
  4. Add the soaked and fluffed bulgur to the vegetable mixture, stirring gently to combine.
  5. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper until well emulsified.
  6. Pour the dressing over the bulgur and vegetable mixture, tossing gently to ensure everything is well coated.
  7. Taste and adjust seasoning with additional salt or lemon juice if needed.
  8. Let the tabbouleh sit for at least 30 minutes at room temperature to allow the flavors to meld.
