Tabbouleh
A fresh salad made with parsley, bulgur, tomatoes, and lemon juice.
Instructions
- Place the bulgur wheat in a large bowl and pour the boiling water over it. Stir briefly, then cover and let it sit for 15-20 minutes, or until the bulgur has absorbed the water and is tender.
- Fluff the bulgur with a fork to separate the grains. If any excess water remains, drain it off using a fine mesh strainer.
- In a large mixing bowl, combine the chopped parsley, mint, tomatoes, and green onions.
- Add the soaked and fluffed bulgur to the vegetable mixture, stirring gently to combine.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper until well emulsified.
- Pour the dressing over the bulgur and vegetable mixture, tossing gently to ensure everything is well coated.
- Taste and adjust seasoning with additional salt or lemon juice if needed.
- Let the tabbouleh sit for at least 30 minutes at room temperature to allow the flavors to meld.
