Sichuan dry-fried green beans
A Sichuan dish of stir-fried green beans with ground pork, garlic, ginger, and preserved vegetables, seasoned with soy sauce and chili for a savory and spicy flavor.
Instructions
- Heat 1 tablespoon (15ml) of vegetable oil in a large skillet or wok over medium-high heat.
- Add the green beans and stir-fry for 6-8 minutes, until they start to blister and become tender. Remove the beans from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of oil. Add the ground pork and cook, breaking it up with a spoon, until browned and cooked through.
- Add the minced garlic, ginger, and chopped preserved vegetables to the pork. Stir-fry for another 2 minutes until fragrant.
- Return the green beans to the skillet. Stir in the soy sauce, Shaoxing wine, sugar, ground Sichuan peppercorns, and dried chilies.
- Toss everything together and stir-fry for an additional 2-3 minutes to combine the flavors.
- Add the sliced green onions, stir well, and cook for a final minute.
- Transfer to a serving dish and serve hot.
