Sichuan dry-fried green beans

A Sichuan dish of stir-fried green beans with ground pork, garlic, ginger, and preserved vegetables, seasoned with soy sauce and chili for a savory and spicy flavor.

Instructions

  1. Heat 1 tablespoon (15ml) of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the green beans and stir-fry for 6-8 minutes, until they start to blister and become tender. Remove the beans from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of oil. Add the ground pork and cook, breaking it up with a spoon, until browned and cooked through.
  4. Add the minced garlic, ginger, and chopped preserved vegetables to the pork. Stir-fry for another 2 minutes until fragrant.
  5. Return the green beans to the skillet. Stir in the soy sauce, Shaoxing wine, sugar, ground Sichuan peppercorns, and dried chilies.
  6. Toss everything together and stir-fry for an additional 2-3 minutes to combine the flavors.
  7. Add the sliced green onions, stir well, and cook for a final minute.
  8. Transfer to a serving dish and serve hot.
