Scallop ceviche
A refreshing seafood dish made with scallops marinated in citrus juice, mixed with onions, chili, cilantro, and other fresh ingredients.
Instructions
- In a large glass or ceramic bowl, combine the thinly sliced scallops with the fresh lime juice. Ensure the scallops are fully submerged in the juice.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the scallops to 'cook' in the lime juice until opaque.
- After marinating, drain the scallops, reserving a few tablespoons of the lime juice.
- In a separate bowl, mix the scallops with salt, black pepper, red onion, red chili, cilantro, and reserved lime juice.
- Gently fold in the diced cucumber, corn, and avocado, being careful not to mash the avocado.
- Taste and adjust seasoning if necessary, adding more salt or lime juice as desired.
- Transfer the ceviche to a serving dish and garnish with additional cilantro if desired.
