Scallop ceviche

A refreshing seafood dish made with scallops marinated in citrus juice, mixed with onions, chili, cilantro, and other fresh ingredients.

Instructions

  1. In a large glass or ceramic bowl, combine the thinly sliced scallops with the fresh lime juice. Ensure the scallops are fully submerged in the juice.
  2. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the scallops to 'cook' in the lime juice until opaque.
  3. After marinating, drain the scallops, reserving a few tablespoons of the lime juice.
  4. In a separate bowl, mix the scallops with salt, black pepper, red onion, red chili, cilantro, and reserved lime juice.
  5. Gently fold in the diced cucumber, corn, and avocado, being careful not to mash the avocado.
  6. Taste and adjust seasoning if necessary, adding more salt or lime juice as desired.
  7. Transfer the ceviche to a serving dish and garnish with additional cilantro if desired.
