Onion bhaji
A popular Indian snack made with spiced gram flour batter and thinly sliced onions, deep-fried until crispy and golden.
Instructions
- In a large mixing bowl, combine the gram flour, rice flour, cumin seeds, crushed coriander seeds, turmeric powder, red chili powder, and salt.
- Add the thinly sliced onions, fresh coriander leaves, and green chilies to the flour mixture. Toss everything together until the onions are well coated with the flour and spices.
- Gradually add water to the mixture, a few tablespoons at a time, mixing with your hands until the batter is thick enough to hold the onion slices together but not too runny.
- Heat oil in a deep frying pan or kadai over medium-high heat. The oil should be about 2 inches deep.
- To test if the oil is hot enough, drop a small piece of batter into the oil. It should sizzle and rise to the surface immediately.
- Using your hands, drop small portions of the onion mixture into the hot oil. Do not overcrowd the pan.
- Fry the bhajis for about 4-5 minutes, turning occasionally, until they are golden brown and crispy on all sides.
- Remove the onion bhajis with a slotted spoon and drain on paper towels to remove excess oil.
- Repeat the process with the remaining batter.
- Serve hot with mint chutney or tamarind sauce.
