mashed potatoes
A creamy and comforting dish made from boiled potatoes mashed with butter, milk, and seasoning, often served as a side.
Instructions
- Place the potatoes in a large pot and cover with cold water. Add 1 teaspoon (6g) of salt to the water.
- Bring the water to a boil over high heat, then reduce the heat to medium-low and simmer until the potatoes are very tender, about 15-20 minutes.
- While the potatoes are cooking, heat the milk and butter in a small saucepan over low heat until the butter is melted. Stir in the heavy cream and remove from heat.
- Drain the potatoes well and return them to the pot. Allow them to sit in the pot for a minute to evaporate any excess moisture.
- Mash the potatoes using a potato masher or ricer until smooth and free of lumps.
- Gradually stir in the warm milk and butter mixture into the mashed potatoes until fully incorporated.
- Season the mashed potatoes with salt and freshly ground black pepper to taste.
- If using, fold in the chopped chives for a touch of freshness.
- Serve the mashed potatoes hot, garnished with additional butter or chives if desired.
