A creamy and comforting dish made from boiled potatoes mashed with butter, milk, and seasoning, often served as a side.

Instructions

  1. Place the potatoes in a large pot and cover with cold water. Add 1 teaspoon (6g) of salt to the water.
  2. Bring the water to a boil over high heat, then reduce the heat to medium-low and simmer until the potatoes are very tender, about 15-20 minutes.
  3. While the potatoes are cooking, heat the milk and butter in a small saucepan over low heat until the butter is melted. Stir in the heavy cream and remove from heat.
  4. Drain the potatoes well and return them to the pot. Allow them to sit in the pot for a minute to evaporate any excess moisture.
  5. Mash the potatoes using a potato masher or ricer until smooth and free of lumps.
  6. Gradually stir in the warm milk and butter mixture into the mashed potatoes until fully incorporated.
  7. Season the mashed potatoes with salt and freshly ground black pepper to taste.
  8. If using, fold in the chopped chives for a touch of freshness.
  9. Serve the mashed potatoes hot, garnished with additional butter or chives if desired.
