Lovo
Meat and vegetables wrapped in banana leaves and cooked in an underground oven.
Instructions
- Prepare the banana leaves by passing them over a flame or hot surface briefly to make them pliable. Set aside.
- In a large bowl, combine the chicken pieces, taro chunks, sweet potatoes, spinach leaves, coconut milk, salt, pepper, and vegetable oil. Mix well to ensure the ingredients are evenly coated.
- Lay out two banana leaves on a flat surface, slightly overlapping each other. Place a portion of the meat and vegetable mixture in the center.
- Fold the banana leaves over the mixture to form a secure parcel, tucking in the ends. Use additional leaves if necessary to ensure the parcel is well-covered.
- Repeat the wrapping process with the remaining mixture and banana leaves.
- Dig a shallow pit in the ground, about 2 feet (60cm) deep. Line the bottom with stones and build a fire over them until the stones are red hot.
- Carefully remove the coals and place the wrapped parcels on the hot stones. Pour 1/2 cup (120ml) of water over the parcels to create steam.
- Cover the parcels with more banana leaves and then with earth to seal in the heat and steam.
- Cook for approximately 2-3 hours, depending on the type and size of the meat used, until the meat is tender and cooked through.
- Carefully uncover the lovo, remove the parcels, and serve the contents hot.
