Fufu
A dough-like staple made from cassava or yams, served with soups or stews.
Instructions
- Place the cassava and plantain chunks in a large pot. Add enough water to cover them, about 6-8 cups.
- Add the salt to the pot and bring the water to a boil over medium-high heat. Once boiling, reduce the heat to a simmer.
- Cook the cassava and plantains for about 20-25 minutes, or until both are very tender and can be easily pierced with a fork.
- Drain the cooked cassava and plantains, reserving some of the cooking water.
- Transfer the cassava and plantains to a large mortar and pestle or a sturdy bowl. Begin pounding and mashing them together into a smooth, dough-like consistency. You can also use a food processor.
- Gradually add reserved cooking water, a tablespoon at a time, to achieve the desired smoothness and elasticity.
- Once smooth, add the vegetable oil and continue to pound or blend until well incorporated.
- Divide the fufu into portions and wrap each portion in plastic wrap to shape and keep warm.
- Serve warm with your choice of Ghanaian soup or stew, such as peanut soup or light soup.
