Feijoada

A Brazilian stew made with black beans, pork, beef, and sausages, traditionally served with rice, collard greens, and orange slices.

Instructions

  1. Drain and rinse the soaked black beans. Set aside.
  2. In a large pot, heat olive oil over medium heat. Add bacon and cook until crispy. Remove and set aside.
  3. In the same pot, add the pork loin and beef jerky. Brown on all sides. Remove and set aside.
  4. Add the smoked sausage to the pot and brown. Remove and set aside with other meats.
  5. Add onion and garlic to the pot. Sauté until onion is translucent.
  6. Return all meats to the pot. Add black beans, bay leaves, salt, and pepper. Cover with water by about 5 cm.
  7. Bring to a boil, then reduce heat to low. Simmer for about 2 hours, stirring occasionally, until beans are tender and the stew is thickened.
  8. Adjust seasoning with salt and pepper if needed.
  9. Serve hot, garnished with fresh parsley, alongside cooked white rice, sautéed collard greens, and orange slices.
