Feijoada
A Brazilian stew made with black beans, pork, beef, and sausages, traditionally served with rice, collard greens, and orange slices.
Instructions
- Drain and rinse the soaked black beans. Set aside.
- In a large pot, heat olive oil over medium heat. Add bacon and cook until crispy. Remove and set aside.
- In the same pot, add the pork loin and beef jerky. Brown on all sides. Remove and set aside.
- Add the smoked sausage to the pot and brown. Remove and set aside with other meats.
- Add onion and garlic to the pot. Sauté until onion is translucent.
- Return all meats to the pot. Add black beans, bay leaves, salt, and pepper. Cover with water by about 5 cm.
- Bring to a boil, then reduce heat to low. Simmer for about 2 hours, stirring occasionally, until beans are tender and the stew is thickened.
- Adjust seasoning with salt and pepper if needed.
- Serve hot, garnished with fresh parsley, alongside cooked white rice, sautéed collard greens, and orange slices.
