A layered dish of bread, chickpeas, yogurt, and tahini.

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the pita bread into small bite-sized pieces and spread them on a baking sheet. Drizzle with a little olive oil and bake for 10-15 minutes, or until golden and crisp. Set aside.
  3. In a small skillet, heat 1 tablespoon of olive oil over medium heat. Add the pine nuts and cook, stirring frequently, until golden brown. Remove from heat and set aside.
  4. In a medium bowl, combine the yogurt, tahini, lemon juice, minced garlic, salt, and cumin. Stir until smooth and well combined.
  5. In a serving dish, layer the toasted pita bread pieces at the bottom.
  6. Spread the cooked chickpeas evenly over the pita bread.
  7. Pour the yogurt-tahini sauce over the chickpeas, spreading it out with a spatula to cover everything evenly.
  8. Drizzle the remaining olive oil over the top and sprinkle with the toasted pine nuts and chopped parsley.
  9. Serve immediately while the pita is still crisp, or let it sit for a few minutes to allow the flavors to meld.
