Fatteh
A layered dish of bread, chickpeas, yogurt, and tahini.
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the pita bread into small bite-sized pieces and spread them on a baking sheet. Drizzle with a little olive oil and bake for 10-15 minutes, or until golden and crisp. Set aside.
- In a small skillet, heat 1 tablespoon of olive oil over medium heat. Add the pine nuts and cook, stirring frequently, until golden brown. Remove from heat and set aside.
- In a medium bowl, combine the yogurt, tahini, lemon juice, minced garlic, salt, and cumin. Stir until smooth and well combined.
- In a serving dish, layer the toasted pita bread pieces at the bottom.
- Spread the cooked chickpeas evenly over the pita bread.
- Pour the yogurt-tahini sauce over the chickpeas, spreading it out with a spatula to cover everything evenly.
- Drizzle the remaining olive oil over the top and sprinkle with the toasted pine nuts and chopped parsley.
- Serve immediately while the pita is still crisp, or let it sit for a few minutes to allow the flavors to meld.
