Instructions

  1. In a medium skillet over medium heat, cook the lardons until crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels.
  2. In a small bowl, whisk together the apple cider vinegar, olive oil, and Dijon mustard. Season with salt and pepper to taste.
  3. In a large salad bowl, combine the endive leaves, Roquefort cheese, cooked lardons, apple slices, and walnuts.
  4. Pour the dressing over the salad and toss gently to combine, ensuring all ingredients are well coated.
  5. Transfer the salad to a serving platter or individual plates.
  6. Sprinkle the chopped chives over the top for garnish.
