Instructions
- Rinse the rice under cold water until the water runs clear, then drain and set aside.
- In a medium saucepan, bring the water to a boil and add the dried djon djon mushrooms. Boil for 10 minutes, then strain the liquid into a bowl, discarding the mushrooms. Reserve the mushroom broth.
- In a large pot, heat the vegetable oil over medium heat. Add the onion and garlic, sautéing until the onion becomes translucent, about 5 minutes.
- Add the green bell pepper and continue to cook for another 2 minutes until softened.
- Stir in the rice, coating it with the oil and vegetables. Cook for about 2 minutes, stirring frequently.
- Add the reserved mushroom broth, salt, black pepper, thyme, and scotch bonnet pepper if using. Bring to a boil.
- Reduce the heat to low, cover the pot, and let the rice simmer for 18-20 minutes, or until the liquid is absorbed and the rice is tender.
- Remove the scotch bonnet pepper if used. Gently stir in the lima beans or pigeon peas, then cover and let sit off the heat for 5 minutes.
- Fluff the rice with a fork before serving.
