Diri Ak Djon Djon

Instructions

  1. Rinse the rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium saucepan, bring the water to a boil and add the dried djon djon mushrooms. Boil for 10 minutes, then strain the liquid into a bowl, discarding the mushrooms. Reserve the mushroom broth.
  3. In a large pot, heat the vegetable oil over medium heat. Add the onion and garlic, sautéing until the onion becomes translucent, about 5 minutes.
  4. Add the green bell pepper and continue to cook for another 2 minutes until softened.
  5. Stir in the rice, coating it with the oil and vegetables. Cook for about 2 minutes, stirring frequently.
  6. Add the reserved mushroom broth, salt, black pepper, thyme, and scotch bonnet pepper if using. Bring to a boil.
  7. Reduce the heat to low, cover the pot, and let the rice simmer for 18-20 minutes, or until the liquid is absorbed and the rice is tender.
  8. Remove the scotch bonnet pepper if used. Gently stir in the lima beans or pigeon peas, then cover and let sit off the heat for 5 minutes.
  9. Fluff the rice with a fork before serving.
