Cornbread
A classic Southern dish made from a batter of cornmeal, flour, eggs, and buttermilk, baked or fried to create a golden, slightly crumbly bread.
Instructions
- Preheat your oven to 400°F (200°C). Grease a 9-inch cast-iron skillet with 1 tablespoon of vegetable oil and place it in the oven to heat while you prepare the batter.
- In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda, and salt until well combined.
- In a separate bowl, beat the eggs and then whisk in the buttermilk and melted butter until the mixture is smooth.
- Make a well in the center of the dry ingredients and pour in the wet ingredients. Stir gently with a spatula until just combined, being careful not to overmix.
- Carefully remove the hot skillet from the oven and pour the batter into the skillet, spreading it evenly with a spatula.
- Return the skillet to the oven and bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Allow the cornbread to cool in the skillet for about 5 minutes before slicing and serving.
