carrot salad

A refreshing salad made with grated carrots, often combined with lemon juice, olive oil, and seasonings, sometimes including raisins, nuts, or herbs.

Instructions

  1. In a large mixing bowl, combine the grated carrots with the fresh lemon juice and olive oil. Toss well to coat the carrots evenly.
  2. Add the honey, salt, and freshly ground black pepper to the bowl. Mix thoroughly until the honey is well distributed.
  3. Stir in the raisins and walnuts, ensuring they are evenly mixed into the salad.
  4. Sprinkle the ground coriander over the salad and toss again to incorporate the spice.
  5. Gently fold in the chopped parsley, reserving a small amount for garnishing if desired.
  6. Cover the bowl with plastic wrap and refrigerate the salad for at least 30 minutes to allow the flavors to meld.
  7. Before serving, give the salad a final toss and transfer it to a serving dish.
  8. Garnish with the reserved parsley and serve chilled.
