Asado

Grilled meat, similar to Argentina’s asado, often served with chimichurri.

Instructions

  1. Prepare the grill for medium-high heat, ensuring the coals are evenly distributed for consistent cooking.
  2. In a bowl, combine olive oil, red wine vinegar, minced garlic, oregano, salt, black pepper, and red pepper flakes. Mix well to form a marinade.
  3. Place the beef and sausages in a large dish. Pour the marinade over the meat, ensuring each piece is well coated. Let it marinate for at least 30 minutes at room temperature or up to 4 hours in the refrigerator.
  4. Once the grill is ready, remove the meat from the marinade, allowing excess to drip off. Place the beef on the grill.
  5. Grill the beef for about 5-7 minutes per side for medium-rare, adjusting time for your preferred doneness. Turn occasionally to ensure even cooking.
  6. Add the sausages to the grill and cook for about 10-12 minutes, turning occasionally until browned and cooked through.
  7. Once cooked, remove the meat from the grill and let it rest for 5 minutes to allow the juices to redistribute.
  8. Slice the beef against the grain and serve with the grilled sausages.
  9. Sprinkle with freshly chopped parsley before serving.
