Asado
Grilled meat, similar to Argentina’s asado, often served with chimichurri.
Instructions
- Prepare the grill for medium-high heat, ensuring the coals are evenly distributed for consistent cooking.
- In a bowl, combine olive oil, red wine vinegar, minced garlic, oregano, salt, black pepper, and red pepper flakes. Mix well to form a marinade.
- Place the beef and sausages in a large dish. Pour the marinade over the meat, ensuring each piece is well coated. Let it marinate for at least 30 minutes at room temperature or up to 4 hours in the refrigerator.
- Once the grill is ready, remove the meat from the marinade, allowing excess to drip off. Place the beef on the grill.
- Grill the beef for about 5-7 minutes per side for medium-rare, adjusting time for your preferred doneness. Turn occasionally to ensure even cooking.
- Add the sausages to the grill and cook for about 10-12 minutes, turning occasionally until browned and cooked through.
- Once cooked, remove the meat from the grill and let it rest for 5 minutes to allow the juices to redistribute.
- Slice the beef against the grain and serve with the grilled sausages.
- Sprinkle with freshly chopped parsley before serving.
