Nyama Choma

Grilled meat, typically goat or beef, served with ugali and kachumbari salad.

Instructions

  1. In a large bowl, combine the lemon juice, vegetable oil, minced garlic, cumin, paprika, salt, pepper, and chili powder.
  2. Add the goat or beef pieces to the marinade, ensuring each piece is thoroughly coated. Cover and let marinate in the refrigerator for at least 2 hours, or overnight for best results.
  3. Preheat your grill to medium-high heat.
  4. Thread the marinated meat onto skewers, leaving a little space between each piece for even cooking.
  5. Place the skewers on the grill and cook for 15-20 minutes, turning occasionally, until the meat is cooked through and has a nice char.
  6. Remove the meat from the grill and let it rest for a few minutes.
  7. Meanwhile, prepare the kachumbari salad by mixing chopped onions, tomatoes, and cilantro in a bowl. Season with salt and a squeeze of lemon juice.
  8. Serve the Nyama Choma hot with ugali on the side and a generous portion of kachumbari salad.
  9. Garnish with additional fresh cilantro if desired.
