Nyama Choma
Grilled meat, typically goat or beef, served with ugali and kachumbari salad.
Instructions
- In a large bowl, combine the lemon juice, vegetable oil, minced garlic, cumin, paprika, salt, pepper, and chili powder.
- Add the goat or beef pieces to the marinade, ensuring each piece is thoroughly coated. Cover and let marinate in the refrigerator for at least 2 hours, or overnight for best results.
- Preheat your grill to medium-high heat.
- Thread the marinated meat onto skewers, leaving a little space between each piece for even cooking.
- Place the skewers on the grill and cook for 15-20 minutes, turning occasionally, until the meat is cooked through and has a nice char.
- Remove the meat from the grill and let it rest for a few minutes.
- Meanwhile, prepare the kachumbari salad by mixing chopped onions, tomatoes, and cilantro in a bowl. Season with salt and a squeeze of lemon juice.
- Serve the Nyama Choma hot with ugali on the side and a generous portion of kachumbari salad.
- Garnish with additional fresh cilantro if desired.
