Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Peel the sweet potatoes and cut them into thin strips, approximately 1/4 inch thick.
- In a large bowl, combine the olive oil, salt, garlic powder, smoked paprika, black pepper, and cayenne pepper if using. Mix well.
- Add the sweet potato strips to the bowl and toss to coat evenly with the seasoning mixture.
- Sprinkle the cornstarch over the seasoned sweet potatoes and toss again to ensure even coating.
- Spread the sweet potato fries in a single layer on the prepared baking sheet, making sure they do not overlap.
- Bake in the preheated oven for 20 minutes, then flip the fries using a spatula for even cooking.
- Bake for an additional 10-15 minutes until the fries are crispy and golden brown.
- Remove from the oven and sprinkle with fresh rosemary if using. Let cool slightly before serving.
