Sweet potato casserole

A comforting casserole made with mashed sweet potatoes, brown sugar, butter, and often topped with marshmallows or a pecan streusel.

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9x13 inch (23x33 cm) baking dish.
  2. Place the sweet potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 20 minutes. Drain and return to the pot.
  3. Mash the sweet potatoes until smooth. Stir in the milk, 1/2 cup brown sugar, melted butter, vanilla extract, salt, and cinnamon. Beat in the eggs until well combined.
  4. Spread the sweet potato mixture evenly into the prepared baking dish.
  5. In a small bowl, combine the pecans, 1/2 cup brown sugar, and softened butter. Mix until the topping resembles coarse crumbs.
  6. Sprinkle the pecan mixture evenly over the sweet potato layer in the baking dish.
  7. Bake in the preheated oven for 25 minutes.
  8. Remove the casserole from the oven and sprinkle the marshmallows evenly on top.
  9. Return to the oven and bake for an additional 10 minutes, or until the marshmallows are golden brown.
  10. Allow to cool slightly before serving.
