Sweet potato casserole
A comforting casserole made with mashed sweet potatoes, brown sugar, butter, and often topped with marshmallows or a pecan streusel.
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9x13 inch (23x33 cm) baking dish.
- Place the sweet potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 20 minutes. Drain and return to the pot.
- Mash the sweet potatoes until smooth. Stir in the milk, 1/2 cup brown sugar, melted butter, vanilla extract, salt, and cinnamon. Beat in the eggs until well combined.
- Spread the sweet potato mixture evenly into the prepared baking dish.
- In a small bowl, combine the pecans, 1/2 cup brown sugar, and softened butter. Mix until the topping resembles coarse crumbs.
- Sprinkle the pecan mixture evenly over the sweet potato layer in the baking dish.
- Bake in the preheated oven for 25 minutes.
- Remove the casserole from the oven and sprinkle the marshmallows evenly on top.
- Return to the oven and bake for an additional 10 minutes, or until the marshmallows are golden brown.
- Allow to cool slightly before serving.
