Instructions

  1. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. Peel the sweet potatoes and cut them into thin strips, about 1/4 inch (0.6 cm) thick, resembling traditional fries.
  3. In a large bowl, combine the olive oil, garlic powder, smoked paprika, black pepper, salt, cornstarch, and cayenne pepper if using. Mix well.
  4. Add the sweet potato strips to the bowl and toss until they are evenly coated with the seasoning mixture.
  5. Spread the sweet potato fries in a single layer on the prepared baking sheet, ensuring they are not overcrowded to allow even cooking.
  6. Bake in the preheated oven for 20-25 minutes, flipping the fries halfway through, until they are golden brown and crispy on the edges.
  7. Remove from the oven and immediately sprinkle with additional salt to taste and chopped parsley for garnish.
  8. For an optional flavor boost, drizzle with balsamic vinegar before serving.
  9. Serve hot as a side dish or snack, pairing well with dips like ketchup, aioli, or ranch dressing.
