Suya

Spiced grilled meat skewers served with a peanut dipping sauce.

Instructions

  1. In a large mixing bowl, combine ground peanuts, ginger, cayenne pepper, paprika, onion powder, garlic powder, salt, and white pepper to create the suya spice mix.
  2. Add the beef cubes to the bowl and toss them thoroughly in the spice mix, ensuring each piece is well-coated. Let the beef marinate for at least 30 minutes or up to 2 hours in the refrigerator for maximum flavor.
  3. Preheat your grill or broiler to medium-high heat. If using a grill, lightly oil the grates to prevent sticking.
  4. Thread the marinated beef cubes onto the soaked wooden skewers, leaving a small gap between each piece for even cooking.
  5. Brush the skewered beef with vegetable oil to help keep the meat moist during grilling.
  6. Place the skewers on the grill or under the broiler. Cook for about 8-10 minutes, turning occasionally, until the beef is cooked through and has a nice char on the edges.
  7. Remove the skewers from the grill and let them rest for a few minutes before serving.
  8. Serve the suya with a simple peanut dipping sauce or additional suya spice mix on the side.
