Instructions
- Cook the ramen noodles according to package instructions, then drain and set aside.
- In a large pot, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
- Add soy sauce, rice vinegar, and chili oil to the pot, stirring to combine.
- Pour in the chicken or vegetable broth and bring the mixture to a simmer.
- In a separate pan, cook the sliced pork belly over medium-high heat until browned and crispy, about 5-7 minutes.
- Divide the cooked noodles into bowls. Pour the spicy broth over the noodles.
- Top each bowl with crispy pork slices, halved soft-boiled eggs, sliced green onions, and sesame seeds.
- Serve immediately, allowing diners to mix the toppings into the broth as they eat.
