Polenta fries

Crispy fries made from seasoned polenta, baked or fried until golden, served as a savory snack or side dish.

Instructions

  1. In a medium saucepan, bring the water to a boil. Add the salt, then gradually whisk in the polenta, stirring constantly to prevent lumps.
  2. Reduce the heat to low and continue to stir the polenta until it thickens, about 5 minutes.
  3. Stir in the black pepper, garlic powder, dried oregano, Parmesan cheese, olive oil, and butter. Mix well until the cheese and butter are fully melted and incorporated.
  4. Remove the saucepan from heat. Pour the polenta into a greased 9x9 inch (23x23 cm) baking dish and spread it evenly with a spatula. Let it cool to room temperature, then cover and refrigerate for at least 1 hour or until firm.
  5. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  6. Once the polenta is firm, remove it from the refrigerator and cut it into fry-shaped pieces, about 1/2 inch (1.3 cm) thick.
  7. Arrange the polenta fries on the prepared baking sheet, leaving space between each piece. Brush or spray the tops lightly with olive oil.
  8. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until the fries are golden brown and crispy on the outside.
  9. Remove from oven and let cool slightly. Garnish with chopped fresh parsley before serving.
