Polenta fries
Crispy fries made from seasoned polenta, baked or fried until golden, served as a savory snack or side dish.
Instructions
- In a medium saucepan, bring the water to a boil. Add the salt, then gradually whisk in the polenta, stirring constantly to prevent lumps.
- Reduce the heat to low and continue to stir the polenta until it thickens, about 5 minutes.
- Stir in the black pepper, garlic powder, dried oregano, Parmesan cheese, olive oil, and butter. Mix well until the cheese and butter are fully melted and incorporated.
- Remove the saucepan from heat. Pour the polenta into a greased 9x9 inch (23x23 cm) baking dish and spread it evenly with a spatula. Let it cool to room temperature, then cover and refrigerate for at least 1 hour or until firm.
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Once the polenta is firm, remove it from the refrigerator and cut it into fry-shaped pieces, about 1/2 inch (1.3 cm) thick.
- Arrange the polenta fries on the prepared baking sheet, leaving space between each piece. Brush or spray the tops lightly with olive oil.
- Bake in the preheated oven for 25-30 minutes, flipping halfway through, until the fries are golden brown and crispy on the outside.
- Remove from oven and let cool slightly. Garnish with chopped fresh parsley before serving.
