Palak Paneer

A North Indian dish featuring spinach and paneer cooked with aromatic spices, garlic, and ginger in a creamy sauce.

Instructions

  1. Heat 1 tablespoon of ghee or oil in a large pan over medium heat. Add paneer cubes and lightly fry until they are golden brown on all sides. Remove from pan and set aside.
  2. In the same pan, add another tablespoon of ghee or oil. Add cumin seeds and let them splutter.
  3. Add chopped onions and sauté until they turn golden brown. Stir in the ginger-garlic paste and cook for another 1-2 minutes until the raw aroma disappears.
  4. Add the pureed tomatoes, turmeric powder, red chili powder, and salt. Cook until the oil separates from the tomato mixture.
  5. Add the chopped spinach and cook until the leaves wilt and the mixture is well combined.
  6. Using an immersion blender or transferring to a food processor, blend the spinach mixture until it reaches a smooth consistency. Return the mixture to the pan.
  7. Stir in garam masala and heavy cream. Mix well and let the sauce simmer for about 5 minutes, adjusting the consistency with water if needed.
  8. Add the fried paneer cubes to the simmering sauce and cook for another 5 minutes, allowing the paneer to absorb the flavors.
  9. Garnish with fresh cilantro before serving.
