Palak Paneer
A North Indian dish featuring spinach and paneer cooked with aromatic spices, garlic, and ginger in a creamy sauce.
Instructions
- Heat 1 tablespoon of ghee or oil in a large pan over medium heat. Add paneer cubes and lightly fry until they are golden brown on all sides. Remove from pan and set aside.
- In the same pan, add another tablespoon of ghee or oil. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn golden brown. Stir in the ginger-garlic paste and cook for another 1-2 minutes until the raw aroma disappears.
- Add the pureed tomatoes, turmeric powder, red chili powder, and salt. Cook until the oil separates from the tomato mixture.
- Add the chopped spinach and cook until the leaves wilt and the mixture is well combined.
- Using an immersion blender or transferring to a food processor, blend the spinach mixture until it reaches a smooth consistency. Return the mixture to the pan.
- Stir in garam masala and heavy cream. Mix well and let the sauce simmer for about 5 minutes, adjusting the consistency with water if needed.
- Add the fried paneer cubes to the simmering sauce and cook for another 5 minutes, allowing the paneer to absorb the flavors.
- Garnish with fresh cilantro before serving.
