Kibbeh Nayeh

Raw minced lamb mixed with bulgur and spices, served with olive oil.

Instructions

  1. Rinse the bulgur wheat under cold water, then place in a bowl and cover with water. Let it soak for 15-20 minutes until softened.
  2. Drain the bulgur well, pressing out any excess water. Transfer to a large mixing bowl.
  3. Add the minced lamb to the bowl with the bulgur. Mix well using your hands to combine thoroughly.
  4. Incorporate the grated onion, ground allspice, cinnamon, black pepper, and salt into the lamb mixture.
  5. Knead the mixture with your hands for about 5-10 minutes until it becomes smooth and well combined.
  6. Add the olive oil gradually while continuing to knead the mixture until it is well absorbed.
  7. Transfer the kibbeh mixture onto a serving platter and shape into a flat round or oval using your hands.
  8. Drizzle with additional olive oil and sprinkle with chopped mint and parsley.
  9. Serve immediately with fresh vegetables like radishes, scallions, or cucumbers.
