Kibbeh Nayeh
Raw minced lamb mixed with bulgur and spices, served with olive oil.
Instructions
- Rinse the bulgur wheat under cold water, then place in a bowl and cover with water. Let it soak for 15-20 minutes until softened.
- Drain the bulgur well, pressing out any excess water. Transfer to a large mixing bowl.
- Add the minced lamb to the bowl with the bulgur. Mix well using your hands to combine thoroughly.
- Incorporate the grated onion, ground allspice, cinnamon, black pepper, and salt into the lamb mixture.
- Knead the mixture with your hands for about 5-10 minutes until it becomes smooth and well combined.
- Add the olive oil gradually while continuing to knead the mixture until it is well absorbed.
- Transfer the kibbeh mixture onto a serving platter and shape into a flat round or oval using your hands.
- Drizzle with additional olive oil and sprinkle with chopped mint and parsley.
- Serve immediately with fresh vegetables like radishes, scallions, or cucumbers.
