Hummus
A Middle Eastern dip made from blended chickpeas, tahini, lemon juice, garlic, and olive oil.
Instructions
- In a food processor, combine the drained chickpeas, tahini, lemon juice, and minced garlic.
- Pulse the mixture until the chickpeas are roughly chopped.
- Add the olive oil, cumin, and salt. Process until smooth, scraping down the sides of the bowl as necessary.
- With the food processor running, slowly drizzle in the cold water until the hummus reaches your desired creamy consistency.
- Taste and adjust seasoning, adding more salt or lemon juice if needed.
- Transfer the hummus to a serving dish. Use the back of a spoon to create a small well in the center.
- Drizzle additional olive oil into the well and sprinkle with chopped parsley and smoked paprika for garnish.
- Serve with warm pita bread, vegetable sticks, or as part of a mezze platter.
