Hummus

A Middle Eastern dip made from blended chickpeas, tahini, lemon juice, garlic, and olive oil.

Instructions

  1. In a food processor, combine the drained chickpeas, tahini, lemon juice, and minced garlic.
  2. Pulse the mixture until the chickpeas are roughly chopped.
  3. Add the olive oil, cumin, and salt. Process until smooth, scraping down the sides of the bowl as necessary.
  4. With the food processor running, slowly drizzle in the cold water until the hummus reaches your desired creamy consistency.
  5. Taste and adjust seasoning, adding more salt or lemon juice if needed.
  6. Transfer the hummus to a serving dish. Use the back of a spoon to create a small well in the center.
  7. Drizzle additional olive oil into the well and sprinkle with chopped parsley and smoked paprika for garnish.
  8. Serve with warm pita bread, vegetable sticks, or as part of a mezze platter.
