Hummus
A Middle Eastern dip made from blended chickpeas, tahini, lemon juice, garlic, and olive oil.
Instructions
- If using dried chickpeas, soak them in plenty of water overnight. Drain and rinse them, then place in a pot and cover with water. Bring to a boil, then simmer for 1-2 hours, or until tender. Drain and cool slightly.
- In a food processor, combine the cooked chickpeas, tahini, lemon juice, garlic, olive oil, cumin, and salt.
- Process the mixture until smooth and creamy, stopping to scrape down the sides of the bowl as needed. If the hummus is too thick, add a tablespoon of water at a time until the desired consistency is reached.
- Taste and adjust seasoning, adding more salt or lemon juice if desired.
- Transfer the hummus to a serving bowl. Use the back of a spoon to create a small well in the center.
- Drizzle additional olive oil into the well, and sprinkle with smoked paprika and chopped parsley.
- Serve with warm pita bread, vegetable sticks, or as part of a mezze platter.
