Goma-ae

A Japanese side dish of vegetables tossed in a savory sesame dressing.

Instructions

  1. Bring a large pot of water to a boil. Add a pinch of salt and the spinach. Blanch the spinach for 30 seconds to 1 minute until just wilted.
  2. Quickly transfer the spinach to a bowl of ice water to stop the cooking process and preserve the bright green color.
  3. Drain the spinach thoroughly and gently squeeze out any excess water. Chop the spinach into bite-sized pieces and set aside.
  4. In a dry pan over medium heat, toast the white sesame seeds until golden brown and fragrant, about 2-3 minutes. Stir frequently to prevent burning.
  5. Transfer the toasted sesame seeds to a mortar and pestle and grind them into a coarse powder. Alternatively, use a spice grinder.
  6. In a small bowl, combine the ground sesame seeds, soy sauce, mirin, sake, sugar, rice vinegar, and salt. Stir until the sugar is fully dissolved.
  7. Combine the chopped spinach with the sesame dressing in a mixing bowl. Toss until the spinach is evenly coated.
  8. Transfer the spinach to a serving dish and sprinkle with toasted sesame seeds for garnish.
  9. Serve immediately at room temperature or chilled as a side dish.
