Goma-ae
A Japanese side dish of vegetables tossed in a savory sesame dressing.
Instructions
- Bring a large pot of water to a boil. Add a pinch of salt and the spinach. Blanch the spinach for 30 seconds to 1 minute until just wilted.
- Quickly transfer the spinach to a bowl of ice water to stop the cooking process and preserve the bright green color.
- Drain the spinach thoroughly and gently squeeze out any excess water. Chop the spinach into bite-sized pieces and set aside.
- In a dry pan over medium heat, toast the white sesame seeds until golden brown and fragrant, about 2-3 minutes. Stir frequently to prevent burning.
- Transfer the toasted sesame seeds to a mortar and pestle and grind them into a coarse powder. Alternatively, use a spice grinder.
- In a small bowl, combine the ground sesame seeds, soy sauce, mirin, sake, sugar, rice vinegar, and salt. Stir until the sugar is fully dissolved.
- Combine the chopped spinach with the sesame dressing in a mixing bowl. Toss until the spinach is evenly coated.
- Transfer the spinach to a serving dish and sprinkle with toasted sesame seeds for garnish.
- Serve immediately at room temperature or chilled as a side dish.
