Chicken Parmesan
A classic Italian-American dish featuring breaded and fried chicken cutlets topped with marinara sauce and melted mozzarella cheese, often served with pasta.
Instructions
- Preheat your oven to 400°F (200°C).
- Place each chicken breast between two sheets of plastic wrap and pound to about 1/2 inch (1.25cm) thickness using a meat mallet or rolling pin.
- Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, Parmesan cheese, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Season the chicken breasts with the remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- Dip each chicken breast first into the flour, shaking off excess, then into the egg, and finally into the breadcrumb mixture, pressing to adhere.
- Heat olive oil in a large skillet over medium heat. Fry the chicken breasts until golden brown on both sides, about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.
- Spread 1/2 cup (120ml) of marinara sauce over the bottom of a baking dish. Arrange the fried chicken breasts on top.
- Spoon the remaining marinara sauce over the chicken and sprinkle evenly with mozzarella cheese.
- Bake in the preheated oven until the cheese is melted and bubbly, about 15-20 minutes.
- Garnish with chopped basil leaves before serving.
