Barley soup
A hearty soup made with barley, vegetables, and often meat or broth, offering a wholesome and comforting flavor.
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, and sauté for 5-7 minutes until the vegetables begin to soften.
- Add garlic and cook for another minute until fragrant.
- Add the rinsed barley and stir to coat with oil.
- Pour in the broth and add the bay leaf, thyme, black pepper, and salt. Bring to a boil.
- Reduce heat to low, cover, and simmer for 40-45 minutes, or until the barley is tender but still slightly chewy.
- If adding meat, stir it in during the last 10 minutes of cooking to heat through.
- Remove the bay leaf. Stir in fresh parsley and lemon juice.
- Taste and adjust seasoning as needed.
- Serve hot, garnished with additional fresh parsley if desired.
