Arepas
A traditional Venezuelan and Colombian dish made from ground maize dough or precooked corn flour, shaped into round patties and grilled, baked, or fried
Instructions
- In a large mixing bowl, combine the pre-cooked cornmeal and salt.
- Gradually add the warm water to the cornmeal, mixing with your hands until a smooth dough forms. Let the dough rest for about 5 minutes to allow the cornmeal to absorb the water.
- Divide the dough into 8 equal portions and shape them into balls. Flatten each ball with your palms to form discs about 1/2 inch (1.25 cm) thick.
- Heat the vegetable oil in a large skillet or griddle over medium heat.
- Place the arepas in the skillet and cook for about 5-7 minutes on each side, or until they are golden brown and develop a crust.
- Transfer the arepas to a baking sheet and place them in a preheated oven at 350°F (175°C) for an additional 10 minutes to cook through.
- Remove from the oven and let them cool slightly. Slice each arepa in half horizontally, creating a pocket.
- Fill the arepas with cheese, black beans, avocado, shredded chicken, or beef as desired.
- Serve warm, with a small pat of butter on top if desired.
