Salmon Poke

Instructions
- In a medium-sized bowl, combine the soy sauce, sesame oil, rice vinegar, honey, and grated ginger. Whisk until well blended to create the marinade.
- Add the cubed salmon to the marinade, ensuring all pieces are well coated. Cover the bowl with plastic wrap and refrigerate for at least 15 minutes to allow the flavors to meld.
- While the salmon is marinating, prepare the sushi rice according to package instructions and let it cool to room temperature.
- Once marinated, remove the salmon from the refrigerator and gently stir in the sliced green onions and toasted sesame seeds.
- To assemble, place a serving of cooled sushi rice in a bowl. Top with the marinated salmon mixture and diced avocado.
- Garnish with additional green onions and sesame seeds if desired. Serve immediately.
