Panta Bhat
Fermented rice served with fried fish, pickles, and onions.
Instructions
- Place the cooked rice in a large bowl and pour 4 cups of water over it. Add salt and stir to combine.
- Cover the bowl with a lid or plastic wrap and let it sit at room temperature for 8-12 hours or overnight to allow fermentation.
- Once the rice is fermented, drain the excess water. This fermented rice is known as 'Panta Bhat'.
- In a pan, heat the mustard oil until it is hot and smoky. Fry the fish pieces until they are golden brown and crispy. Set aside on a paper towel to drain excess oil.
- In a serving bowl, place a portion of the fermented rice. Top with fried fish pieces.
- Add chopped onions, green chili, and pickles around the rice.
- Sprinkle with fresh coriander leaves and black salt for extra flavor.
- Serve immediately with additional mustard oil drizzled on top for authentic taste.
