Bissara
A creamy soup made from pureed fava beans, garnished with olive oil and spices.
Instructions
- Drain the soaked fava beans and rinse them well under cold water.
- In a large pot, combine the fava beans and water. Bring to a boil over high heat, then reduce the heat to low and simmer uncovered for about 45-60 minutes, or until the beans are very tender.
- Once the beans are soft, remove the pot from heat and use an immersion blender to puree the mixture until smooth and creamy. Alternatively, you can transfer the mixture in batches to a countertop blender.
- Return the pot to low heat and stir in the olive oil, ground cumin, ground coriander, smoked paprika, and minced garlic. Cook for an additional 5 minutes, stirring occasionally.
- Season the soup with salt to taste and adjust the seasoning if necessary.
- Remove from heat and stir in the lemon juice, chopped cilantro, and parsley.
- Ladle the Bissara into bowls, drizzling each serving with extra olive oil.
- Garnish with additional cilantro or parsley if desired.
