Satay

Grilled skewered meat served with a peanut dipping sauce.

Instructions

  1. In a large bowl, combine chicken cubes, sweet soy sauce, vegetable oil, garlic, ground coriander, ground turmeric, salt, and black pepper. Mix well to coat the chicken evenly. Marinate in the refrigerator for at least 1 hour or overnight for better flavor.
  2. While the chicken is marinating, prepare the peanut sauce. In a food processor, combine roasted peanuts, soy sauce, lime juice, palm sugar, and coconut milk. Blend until smooth. Adjust seasoning to taste with additional salt or lime juice if desired.
  3. Preheat a grill or grill pan to medium-high heat.
  4. Thread the marinated chicken pieces onto the soaked skewers.
  5. Grill the skewered chicken for 10-15 minutes, turning occasionally, until they are cooked through and slightly charred on the edges.
  6. While grilling, warm the peanut sauce in a small saucepan over low heat, stirring occasionally until heated through.
  7. Transfer the grilled chicken satay to a serving platter.
  8. Serve the chicken satay with the warm peanut sauce on the side for dipping.
