Pumpkin seed granola
A crunchy and nutritious granola made with pumpkin seeds, oats, nuts, and a touch of sweetness, perfect for breakfast or snacking.
Instructions
- Preheat the oven to 325°F (165°C). Line a large baking sheet with parchment paper.
- In a large bowl, combine the oats, pumpkin seeds, and chopped nuts.
- In a small saucepan over low heat, combine the maple syrup, coconut oil, and brown sugar. Stir until the sugar is dissolved and the mixture is smooth.
- Remove from heat and stir in the vanilla extract, cinnamon, and salt.
- Pour the syrup mixture over the oat mixture and stir until everything is evenly coated.
- Spread the mixture in an even layer on the prepared baking sheet.
- Bake for 25-30 minutes, stirring every 10 minutes, until the granola is golden brown and fragrant.
- Remove from the oven and let it cool completely on the baking sheet. It will become crisp as it cools.
- Once cooled, stir in the dried cranberries or raisins if using.
- Store in an airtight container at room temperature for up to 2 weeks.
