Pumpkin seed granola

A crunchy and nutritious granola made with pumpkin seeds, oats, nuts, and a touch of sweetness, perfect for breakfast or snacking.

Instructions

  1. Preheat the oven to 325°F (165°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, combine the oats, pumpkin seeds, and chopped nuts.
  3. In a small saucepan over low heat, combine the maple syrup, coconut oil, and brown sugar. Stir until the sugar is dissolved and the mixture is smooth.
  4. Remove from heat and stir in the vanilla extract, cinnamon, and salt.
  5. Pour the syrup mixture over the oat mixture and stir until everything is evenly coated.
  6. Spread the mixture in an even layer on the prepared baking sheet.
  7. Bake for 25-30 minutes, stirring every 10 minutes, until the granola is golden brown and fragrant.
  8. Remove from the oven and let it cool completely on the baking sheet. It will become crisp as it cools.
  9. Once cooled, stir in the dried cranberries or raisins if using.
  10. Store in an airtight container at room temperature for up to 2 weeks.
